3. In a pan put the bacon together with the garlic-infused olive oil. And fry it over medium heat for about 5 to 8 minutes, or until the bacon starts to become crispy.
4. Once the bacon is cooked, take it out and in the same pan add the cooking cream and the cheddar and parmesan cheese. (Don't discard the oil left in the pan from the bacon, cook the cream in the oil, that gives all the amazing flavor!)

Add the mushrooms and garlic and cook, stirring frequently, until the mushrooms are a deep brown. Add the cooked pasta to the pan and toss to combine. Remove from the heat.
3. In a medium size bowl, whisk the eggs and egg yolk with the smoked mozzarella to combine. Slowly whisk in the reserved pasta cooking water.
4. Set the pan with the pasta back on the burner, with the heat set to medium-low. Pour in the egg and cheese mixture, stirring constantly to melt the cheese and cook the eggs. Stir in the grated parmesan and cook, stirring constantly until melted.
