1. Preheat oven to 350°F (175°C) and grease a 9 x 5 inch loaf (or similar) with a little oil. Lay a rectangular strip of parchment paper down the middle to stop the bottom of the bread sticking and to act as handles for lifting the loaf out after it's baked.
2. To a large mixing bowl add the spelt flour, oats, baking powder, baking soda and salt and whisk to combine.
3. In another bowl add the water/milk, molasses, maple syrup and oil. Whisk them together well.
4. Pour the wet ingredients into the dry ingredients and stir together gently. Mix until you can no longer see any dry flour but treat it gently and don't beat it hard or use an electric mixer. The batter will be like cake batter consistency.

1. Add the water and honey to a large bowl, or the bowl of your stand mixer. Sprinkle the yeast overtop and let it sit for ten minutes. After ten minutes, it should be foamy. If the mixture doesn't foam, discard - you need new yeast.
2. Add the milk, olive oil, 2 cups (300g) of the flour, and the salt. Stir with a wooden spoon until a loose dough forms.
3. Add the remaining flour 1/2 cup at a time, kneading between each addition, until a smooth, springy dough forms. This should take 8-10 minutes. It should be quite smooth and not really sticky. If you're using a stand mixer, use the dough attachment for this.
4. Place the dough into a large greased bowl and cover with a tea towel or large plate. Let it rise in a warm, draft-free place for one hour, or until doubled in size. This is called proofing.

1. To make the dough, first add the warm water to a large bowl along with the yeast, maple syrup, salt, flaxseed and flours and mix with a wooden spoon. Alternatively, you can use a food processor with a dough attachment. Mix to a uniform dough, remove from the bowl and transfer to a floured work surface (I use a silicone mat). Knead with your hands until smooth and return to a lightly oiled bowl.
2. Place in a warm place without drafts and let rise for 2 hours.
3. At the end of the rising time, preheat the oven to 220 degrees. Place a small heatproof bowl of water in the oven, this will help the bread rise even better. Alternatively, bake the bread in the steamer with a preset program.
4. Put the dough once again on the work surface and knead briefly. Form a small hollow and add the pumpkin seeds. Grease loaf pan with a little olive oil and place the dough inside. Place in the oven and bake for 25 to 35 minutes, until the bread is nicely golden brown.

1. To a large mixing bowl, add 3/4 cup (90 g) spelt flour (amount as original recipe is written // adjust if altering batch size), yeast, sugar and salt. Whisk to combine.
2. In a separate mixing bowl (or small saucepan over medium heat), microwave the almond milk, water, and olive oil until warm - about 110 - 120 degrees (~55 seconds). It should be the temperature of bath water. If it’s too hot, it can kill the yeast.
3. Add wet to the dry ingredients and whisk vigorously or beat on medium/low for 2 minutes, scraping sides as needed.
4. Add 1/4 cup (30 g) more spelt flour (amount as original recipe is written // adjust if altering batch size) and beat for another 2 minutes. Then add only enough remaining flour to make a soft dough (I used slightly less than the full 2 cups called for // amount as original recipe is written // adjust if altering batch size). Transfer to a lightly floured surface and knead until smooth and elastic (~1-2 minutes). Then place back in the mixing bowl, loosely cover, and let rest 10 minutes.
