Aquafaba, the liquid inside a can of chickpeas, provides plenty of protein and starch to help emulsify an egg-free mayonnaise. Adding a few whole chickpeas to the mayo improves its emulsifying properties. When I last worked on making vegan mayonnaise, I tried a whole slew of egg replacements before I finally settled on soft tofu.
Add the aquafaba, lemon, vinegar, syrup, salt, and dry mustard into a tall container. With an immersion blender, blend to combine. Alternatively, use an upright high-speed blender, and blend on low to medium speed. While blending, slowly stream in the oil (a tablespoon or two at a time) until it thickens into a white, creamy mayo.
Aquafaba can be used in a number of ways: It can be added to recipes unwhipped as an egg binder, such as in these Vegan Gluten Free Sugar Cookies. It can also be used to make Vegan Mayo! It can be whipped into semi-stiff peaks and added to recipes as a whipped egg white substitute, such as these Best Vegan Gluten-Free Waffles!
Put the aquafaba (the liquid in a can of cooked chickpeas), vinegar, lemon juice, and Dijon mustard in a tall blender jar or measuring jug. Blend on high speed with an immersion blender for about 30 seconds until frothy. Add olive oil in a very slow, thin stream, while mixing at full speed.
