1. Rinse the octopus under cold running water and remove the beak. Place directly in a pot that will fit the octopus. Add the wine, vinegar, onion, bay leaf, peppercorns, and olive oil. Cover and simmer over low heat for 30-90 minutes until the octopus is knife-tender. Keep checking in case you need to add water to the pot.
2. Whisk the marinade ingredients in a medium bowl. Add the octopus to the marinade bowl and gently roll to coat. Preheat the grill.
3. Set the grill to medium-high heat and coat the grates with oil. Set the octopus whole (if small) or into large serving pieces directly onto the grates. Let the outside brown for 2-3 minutes per side. Rotate to develop a char then place onto a platter with extra marinade. Garnish with lemon wedges.

1. Preheat your oven to 320°F (160°C)
2. Rinse the octopus and discard any stuff from the inner part of its hood. Remove its tooth from the center (the easiest way to do that is to cut the octopus in half. Otherwise, you can pick it out with your finger, but this may be a bit tricky)
3. Make a cross with two sheets of foil, about 1.5-2 feet each. Place a piece of baking paper on the center of the cross and place the octopus on top of it. Pour the olive oil and balsamic over the octopus, add the rest of the ingredients and wrap firmly with the foil.
4. Place on a baking tray and bake for 1 hour 30 minutes. Unwrap and check to see if the octopus is fork tender. If it seems a little tough, bake for 30 more minutes.

1. Transfer the olive oil and the chopped onion to a large pot and place over medium/high heat.When the onion is soft and translucent add the octopus, the bay leaves, the allspice, the cloves, the paprika, the pepper, the sugar, and the Tabasco (if using). Octopus will water out. Stir and cook until all of the water is evaporated and octopus starts to brown.
2. Add the tomato paste, stir for a few seconds and then add the wine. Wait until all of the alcohol is evaporated and add the tomato puree, cover the pot and simmer over low heat until the octopus is tender (time will depend on the octopus, usually it takes 30-50 minutes). Check from time to time to see if you need to add a splash of water.
3. When the octopus is tender, add 5 cups hot water and salt (you’ll have to taste the cooking liquid to determine how much salt you’ll need).Bring to a boil and add the elbow macaroni. Reduce heat to low and cook stirring occasionally for 10-12 minutes until pasta is done. There should be some liquids left. If not, add a bit of water.
4. Serve immediately. Eat!
