1. Melt the mozzarella and cream cheese together in a microwave-safe bowl at full power for 1 minute. Stir, then heat another 30-45 seconds, it should be molten. Scrape the cheese into the bowl of a food processor and process until thoroughly mixed. Add the egg and mix until blended.
2. Add the dry ingredients to the food processor and process until thoroughly combined (about 10-15 seconds).
3. Spray a piece of cling film with oil and scrape the bread dough onto the center of the cling film. It is VERY STICKY. Gently shape the dough into a disk or rectangle and place in the freezer to cool until the oven is ready. (NOTE: if your dough is not very sticky, then it does not need to go into the freezer.)
4. Preheat the oven to 400 degrees F and position the rack to the middle of the oven. Line a cookie sheet with a piece of parchment or a Silpat. (NOTE: I place an old metal pie plate in the bottom of my oven while preheating. Then, I add about 6 ice cubes to it when the rolls go in. This forces them to rise.)

1. Add 3 3/4 cups flour into a mixing bowl, add the yeast and mix well to incorporate the yeast. Add the oil and warm water and mix to make the batter.
2. the batter will form a thick dough. Place your dough on a clean lightly-floured surface and begin to knead. You should spread out a little bit of flour flour to prevent the dough from sticking to your hands, rolling pin, or the work surface. Knead dough until it becomes smooth and stretchy.
3. Lightly oil a mixing bowl. Place your dough in it, and cover with a moist but not soaked towel. Place the bowl with dough in a warm spot (like a preheated oven with the heat turned off) and allow to rise until dough has doubled in size. It should take about 1 hour.
4. Once dough has risen, bring your dough back to your lightly-floured surface. Knead until smooth and pliable, then cut dough into 12 equal portions. Form each portion into a round roll. Arrange rolls on a oiled baking sheet and cover again with a moist towel. Place back in your oven that is warm but not on. Let the rolls rise again, until they are double in size. It should take about 30 minutes.

1. To make the dough: Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess. In a large bowl, combine all the ingredients and mix and knead — by hand or using a stand mixer — until the dough comes together in a smooth, elastic ball. This should take 5 to 7 minutes on low speed of a mixer and slightly longer by hand.
2. Cover the dough and let it rise for 1 to 2 hours, or until it's puffy and close to double in size.
3. Gently deflate the dough and divide it into six pieces; if you have a scale each piece should weigh between 80g and 85g. Shape the pieces into round balls and place them on a lightly greased or parchment-lined baking sheet or into a lightly greased 8” or 9” round pan (for pull-apart rolls). Cover the rolls and let them rise for about an hour, until noticeably puffy.
4. Toward the end of the rising time, preheat the oven to 350°F.
