1. Cook pasta according to the packet instruction but by using cooking spray or even better without any fat(it’s manageable!), drain them and keep aside.
2. In a heated pan, spray cooking oil and roast garlic until brown, then add in tomatoes and roast on low flame for good 15 -20 minutes or until liquid evaporates.
3. Cool the mixture and blend into a sauce consistency, I like to keep the sauce a bit chunky but if you prefer can blend it smooth.
4. In the same pan used above, spray oil and pour the sauce and cook it for 10 minutes or so adding in salt, pepper and Italian mixed herbs.

1. Add the minced garlic to a small bowl and cover with the white wine. Let sit for 15 minutes (or covered in the fridge for up to 24 hours for even better flavor) while you prep the rest of the recipe.

3. Stir well, scraping any wine solids from the bottom of the pan. If using the fresh basil, gently bruise or tear it and then add it to the pan. Continue to simmer for about 15 to 20 minutes, stirring occasionally, until the tomatoes have thickened and turned a richer red color, and the garlic is softened.
4. Remove the basil from the pan and discard, if using. Stir in the optional soy sauce if using, and season to taste with salt.
