1. You can use any method of popping popcorn for this recipe. My favorite way is air-popping, since it has no added oil or butter. You can also use microwave popcorn, but I suggest buying reduced fat, less butter, or the 100 calorie bags (regular microwave popcorn is NOT skinny).
2. Measure out 2 cups of popcorn and make sure you pick out any kernels.
3. Toss with melted coconut oil or butter spread (if you're using air-popped or freshly popped popcorn). Omit this step if you're using microwave popcorn that has butter flavoring.
4. Sprinkle abut 1/2 to 1 packet of splenda over your popcorn, to taste. You can also use your favorite sweetener in place of the splenda.

1. Preheat oven to 250 degrees Fahrenheit.
2. In a large dutch oven or pan* heat a little bit of oil over medium heat. Add kernels and cover with a lid. Wait until it starts to pop and shake the pan every 15 second or so. Let the kernels pop for 4-5 minutes until almost all of the kernels have popped and then shut the burner off.**. Make sure to let the pan sit with the lid on for a minute or two after you think the kernels are done popping, I promise you there will be a few late bloomers that will still go off, showering your kitchen floor in popcorn.
3. In the meantime heat maple syrup in a small pan over medium-high heat until it starts to foam/boil. SImmer for 2-4 minutes. Pour maple syrup over popcorn and combine quickly. Add cinnamon, salt and combine well. Spread onto a lined baking sheet and bake in the oven for about 30-35 minutes. Take out of the oven and set aside. The kettle corn will crisp up as it cools down.
