HOW TO MAKE THESE LOW CARB STEAK FAJITAS Start off by making the homemade fajita seasoning. It’s a blend of chili powder, cumin, smoked paprika, onion powder, garlic powder, salt and black pepper. Combine the olive oil, lime juice, cilantro, mustard and fajita seasonings for the steak marinade.
Slice flank steak into 1/2″ thick pieces. Slice peppers and onions into 1/2″ thick pieces and set aside. In a large mixing bowl, add garlic, paprika, chili powder, cumin, and salt. Whisk in lime juice and avocado oil and blend well. Add steak and peppers and toss to coat. Cover with foil and allow to sit for 30 minutes at room temperature.
Served with a healthy dose of peppers and onions, these fajitas are gluten free, low carb and paleo. Steak fajitas are one of my favorite easy Mexican dinners of all time. They’re great for summer grilling, perfect for celebrations like Cinco de Mayo and make a wonderful addition to your weekly meal prep routine. They’re incredibly versatile.
After a good marinade, steak fajitas can be cooked over the grill, in the oven, or on the stove top. The “trick” is to get whatever method you use nice and hot FIRST, then add the steak and veggies. This allows them to cook well, without burning. This recipe will show you hot to cook steak fajitas on a cast iron skillet.
