Thanks for sharing! Terri 28th Jan 2012 Recreation Officer. I made this damper for our Australia Day function at my high care dementia unit - all the staff and residents loved it! I didn't have any oil on hand so used melted butter instead, and I also kneaded the dough by hand rather than using a dough mixer and it still turned out perfectly.

A traditional Australian Damper Recipe with just 3 ingredients. Pre-heat oven to 200 degrees celsius (fan-forced). Sift flour and salt into a large bowl. Warm milk and then add to bowl. Mix with a butter knife until mixture sticks together.
The simplest damper recipe is mixing an amount of flour with half the amount of water and adding a generous pinch of salt. Many recipes may use a mix of self-raising and plain flour, milk instead of water, baking soda, and even beer to act as a yeast substitute!
In a large bowl, add 2 cups of self-raising flour and a pinch of salt, and slowly add some water until the ingredients start to combine and form a dough. Using your hands, cup it and slowly work the dough until you get a nice round damper shape.
There are tons of recipes on the internet for cooking damper, most of them require you to use lots of ingredients and work the dough for a few minutes. When you knead damper too much, it pushes all of the air out and makes the damper dense. So the best way to combine it is with a butter knife, cutting the mixture together like making scones.
