1. Preheat the oven to 350F and line a baking sheet with parchment paper or a silicone mat.
2. Drain and rinse the chickpeas, if you are using canned. Add the chickpeas, cashew butter, flour, maple syrup, vanilla, baking powder, and salt to a food processor with an S-blade attachment. Process until a smooth and thick batter forms, scraping the sides of the device as necessary.
3. Add 3/4 of the chocolate to the food processor and pulse until the chips are evenly distributed.
4. Use a large cookie scoop (I used a 3 tablespoon one) to scoop the dough onto the lined baking sheet. With your hands slightly damp, press each cookie so it is flat and round; the batter will not spread in the oven. Press the remaining chocolate chips into the cookies, and add a sprinkle of extra sea salt, if desired.

You can bring your egg to room temp by running it under warm water for 1-2 minutes.
3. In a separate bowl, whisk together chickpea flour, baking soda and salt. Add dry ingredient to wet ingredients until well combined. Fold in chocolate chips.
4. Use a medium cookie scoop to scoop dough and then use your hands to roll the dough into balls; place on the prepared parchment lined baking sheet. Very gently just barely flatten just the tops of the cookies or you can bake them as is for thicker cookies. Bake for 9-11 minutes or until edges are slightly golden brown. Allow cookies to cool on cookie sheet for 5 minutes before transferring to a wire rack to cool. Makes 12 cookies. Store in airtight container.
