Easy Cheese Manicotti is stuffed with three kinds of cheese and smothered in savory tomato sauce. A simple Italian dish that's sure to be a hit! Preheat oven to 350 degrees. In a medium-sized bowl mix ricotta cheese, 1 ½ cups of mozzarella cheese, parmesan cheese, egg, and spices until well blended.
Low carb manicotti has just 5.8 net carbs per serving. Italian food is one of my very favorite cuisines. I love the seasonings, the rich sauces, the tender pasta, and the gooey cheese that’s a part of so many Italian dishes. Perhaps that’s why I try to recreate them to be low carb. I really like this manicotti recipe – it definitely has the flavor.
Spread 1 jar of spaghetti sauce on the bottom of the 9x13 pan. Stuff each cooked manicotti shell with cheese mixture and place the shells in the baking pan. Pour the second jar of spaghetti sauce overtop the manicotti shells and spread the sauce to cover the pasta. Sprinkle an additional 1 cup of shredded mozzarella on top of the sauce.
Swap the beef for turkey and chicken sausage. Leave the meat out and use vegetables. I love using chopped spinach or sauteed mushrooms. Swap the parsley for other fresh herbs such as basil. Stuffing cooked manicotti shells is a challenge, so using uncooked shells is preferred and saves you the extra step.
