1. Heat half of the olive oil over medium-high heat in a large skillet. Add the chicken and cook for 4-5 minutes until the chicken is browned and cooked through. Then move the chicken to a separate plate.
2. Next add the remaining olive oil to the pan with the bell peppers, onion, celery and garlic. Cook these ingredients for 5-6 minutes until slightly soft.
3. Then in a separate small bowl, combine the soy sauce, corn starch, oyster sauce, vinegar, black pepper and ginger.
4. Then add the sauce and chicken back to the skillet with the vegetables. Stir to combine these ingredients to ensure that all the chicken and vegetables are evenly coated with the sauce. Cook for 1-2 minutes and the sauce has thickened.
