2. Peel and finely mince the garlic or press it through a garlic press. Combine soy sauce, worcestershire, liquid smoke, crushed garlic, onion powder, ground black pepper and sea salt in a large mixing bowl, then whisk to combine.
3. Fill the trays of the dehydrator with single layers of beef, leaving space in between each piece. Every dehydrator is different, so be sure to follow the instructions on your machine for making Jerky. The cooking time is going to vary depending on how your machine works and how thick you slice your jerky. I've had some batches ready after 5 hours, and some have taken 8.
4. Heat the oven to 175°F and cover baking sheets with aluminum foil to catch any drips from the jerky. Place racks over the baking sheets and add the beef in single layers. Bake for 3-4 hours, flipping the jerky halfway, until the Keto Beef Jerky is firm and dry, yet still pliable.

2. Trim off the fat cap and other visible fat from the meat. Fat will make meat spoil faster, so removing as much fat as possible now will extend the shelf life of your finished beef jerky.
3. Place the beef in the freezer for 1-2 hours to partially freeze for easier uniform slices. Your meat should be hard to the touch but not fully frozen.
4. Finish slicing all of your meat and set aside. Now it's time to get the marinade ready. Mix all of the ingredients together in a bowl or ziplock bag and stir well.
5. Add the beef strips and shake the container so all the meat is evenly covered with the marinade. Marinate in the refrigerator anywhere from 6 to 24 hours for great flavor, the longer the better.
6. After marinating, drain and pat dry the jerky strips to remove any excess marinade before dehydrating. This helps in speeding up the dehydration process.
7. It's time for the easy part! As I mentioned above, I used my Excalibur Dehydrator for this batch. Place the beef strips on the racks making sure that they are not touching or overlapping.
8. Beef jerky takes around 4-5 hours to dry when dehydrating. Turn the dehydrator to 165° and let it run for about 4 hours until the internal temperature of the jerky reaches a safe 160° as per guidelines from the USDA.
9. Make sure you check your beef jerky throughout the drying process to avoid over drying. The jerky will be done when it bends and cracks but does not break in half.
10. Now it's time to either store the beef jerky in ziplock bags, vacuum sealed bags, glass jars, or my favorite; your stomach! Beef jerky will stay good for 7-10 days if kept in ziplock bags.

3. Remove the slices of beef from the marinade and pat the meat dry with paper towels once you're ready to cook. Liberally season with salt and sprinkle optional toppings if you prefer. Add pepper for peppered jerky or sprinkle red chili flakes to pair with the spicy jerky marinade. Get creative!
4. Prep your smoker or fire up your Traeger grill to smoke. Once the grill/smoker is ready, lay the beef out in a single layer directly on the grill or on removable smoker racks. Close the smoker lid once the meat is arranged and smoke until the beef jerky is dry yet flexible when bent, about 4 to 5 hours.
