Total Time: 2 hrs 50 minsCategory: BreakfastCalories: 241 per serving1. In a bowl, mix flour, dry yeast, salt and water. Knead until an elastic dough is formed. Let rest with a cover for about 2 hours, until double in size.
2. Preheat oven to 190°C / 370°F. Place baking paper on a baking tray.
3. Transfer the dough from the bowl to the counter, shape into a ball and divide in 4 pieces. Shape each dough piece into a ball. With your thumb and index finger pinch a hole into the middle of the ball and rotate it until the hole enlarges. Repeat with each dough ball, then let rest for 10 minutes.
4. Prepare the water bath - bring a large pot of water to a boil, then reduce heat to a simmer. Place bagels into the simmering water and cook for about 40 seconds, then turn the bagels over and cook for another 30 seconds. During this time the bagels will rise so allow extra space in the pot. Remove the bagels from the water bath and place them on the baking tray.

Ratings: 621Calories: 360 per servingCategory: Breakfast, Main Course1. Preheat the oven to 400 degrees F (204 degrees C). Line a baking sheet with parchment paper.
2. Stir together the almond flour and baking powder. Set aside.
3. Combine the shredded mozzarella and cubed cream cheese in a large bowl. Microwave for 2 minutes, stirring halfway through. Stir again at the end until well incorporated. (If you don't want to use the microwave, heat the cheeses in a double boiler on the stove over low heat, stirring frequently, until completely melted and easy to stir.)
4. Stir the flour mixture and eggs into the melted cheese mixture. Working quickly while the cheese is still hot, knead with your hands until a dough forms. The dough will be very sticky, but keep kneading and squeezing through your fingers for a few minutes. If the dough becomes hard before fully mixed, is too difficult to mix, or is still sticky after a couple minutes, you can microwave/reheat for 15-20 seconds to soften it. In that case, wash your hands and knead again.NOTES:a) It's very important for the dough to be completely uniform before proceeding to the next step. You shouldn't have pieces of cheese separate from areas of almond flour.b) If you want to use a food processor or stand mixer, or if you have trouble with sticky dough, please check the tips in the post above!

Ratings: 592Calories: 175 per servingCategory: Breakfast1. Preheat the oven to 180C/350F. Line a large baking tray with parchment paper and set aside.
2. In a large mixing bowl, combine all your ingredients, except for the water, and mix well. Slowly, add the hot water over the top and mix well, until fully combined.
3. Lightly wet your hands and form 3-4 large balls of dough or 8 small ones. Place each ball of dough onto the lined plate, and press down into a circular shape. Using your index finger, form a hole through the center of each one, forming a bagel shape. If desired, brush the tops of each bagel with egg or milk, for a golden brown finish. Sprinkle the tops of each bagel with your spices/seeds of choice.
4. Bake the bagels for 15-17 minutes, or until just golden around the sides. Remove from the oven and let cool on the pan completely.

Calories: 298 per servingCategory: Breakfast1. Preheat oven to 400°F. Line two baking sheets with parchment paper or silicone baking mats.
2. In a small bowl, whisk together almond flour and baking powder. Set aside.
3. Add mozzarella and cream cheese to a large microwave-safe bowl. Melt in the microwave at full power in 30 second intervals. After each 30 seconds, stir cheese until cheese is completely melted and uniform (see photo above). This should take around 2 ½ minutes total. Do not try to microwave the full time at once because some of the cheese will overcook. You can also melt the cheese over the stove in a double boiler.
4. Add cheese, 2 eggs (remember one of the eggs listed is for the egg wash finish at the end only), and almond flour mixture into a food processor with dough blade attachment. Pulse on high speed until the dough is uniform. The dough will be quite sticky, which is normal.
