These low carb empanadas come together in four steps: keto empanada dough, filling, assembly, and frying: Pulse. Pulse almond flour and eggs in a food processor. Melt. In a medium bowl, microwave mozzarella and stir until smooth. Mix. Add mozzarella to food processor and process until a dough forms.
Roll out each ball into a 3- to 4-inch circle with a rolling pin. Fill one side of the circle with apple filling. Moisten edges lightly with water. Fold dough over the filling and press edges together to seal. Arrange empanadas on the prepared baking sheet. Bake in the preheated oven until dough is golden, about 15 minutes.
Baste the tops of the empanadas with egg white. Combine the remaining sugar and cinnamon, and sprinkle on top. Bake for 20-25 minutes until golden brown. You can use any remaining apple filling to make mini-tarts or pies, or as a topping on ice cream. If you’re short on time, you can also use store-bought frozen pastry dough or empanada discs.
Add one to two tablespoons of the meat mixture (the amount depending on how big your circles are) to the center of each circle of dough. Do not overfill your circles. Fold the circle of dough in half. Use a fork or similar tool to flatten the edges together to keep the filling inside of the empanada while it bakes.
