1. Using a stand up mixer on high, beat egg whites together with sugar until the mixture becomes foamy.
2. Add in salt and cream of tartar and beat until you get stiff peaks. This will take about 10 minutes.
3. In a pastry bag or a ziplock bag with a tip cut out, spoon in meringue mixture for piping.
4. Pipe out small to medium size meringue cookies. Bake them at 200°F for about 90 minutes. Remove them from the oven and let cool and harden at room temperature.

1. Preheat oven to 225ºF. Line a cookie sheet with parchment paper or silicon baking sheet.
2. Separate egg whites, being very careful not to get any shell or yolk into the bowl. (make sure the egg whites are room temperature... let sit out on counter for at least 30 minutes)
3. Using a hand mixer or standing mixer, beat egg whites on low speed. Add the cream of tartar, a pinch of salt, and continue to beat on medium speed until mixture is foamy. (Note: I used my Kitchen Aid with the whisk attachment)
4. Turn the mixer to high speed and with the mixer running, add sugar, one tablespoon at a time, until sugar is dissolved and mixture looks thick and shiny and still peaks form (see photo above - it will take approx 5-7 min).
