We renamed our Duck Liver Mousse with Cognac variety to “Duck Liver and Pork Mousse with Cognac” to better reflect the product’s ingredients. The formula remains the same. A winner of the prestigious Good Food Award in San Francisco, this pâté is incredibly smooth and spreadable.
Preheat the oven to 350°F. Combine the duck livers, cream, 1 tablespoon Madeira, 1 tablespoon port, egg, salt, pepper, Tabasco and nutmeg in a blender. Purée until very smooth, then strain the mixture through a fine-mesh sieve into a small ovenproof pot, stirring the solids to extract as much liquid as possible. Discard the solids.
This is what you want. This is the equivalent of wild foie gras, and yes, wild foie gras is real. I’ve seen similar livers in turkeys, pheasants, quail and even pigeons and doves. You can make duck liver pâté out of any duck’s liver that is safe to eat, however.
