Season with salt and pepper to taste and cook until onion is tender and fragrant. Add bacon mixture to slow cooker. (If your slow cooker has a sauté mode, you can do this step right in the slow cooker.)
3. Add the soaked beans, beer and broth to the slow cooker. Cover and cook on Low heat setting 6 to 8 hours (slow-cooker temperatures will vary).
4. Sprinkle with more chopped cilantro just before serving.

Add the garlic, and saute for an additional 1-2 minutes until fragrant. Add the beer, beans, brown sugar, oregano, chili powder, salt and cumin, and stir to combine. Continue cooking until the beans reach a simmer. Then reduce heat to medium-low, and continue simmering uncovered for about 15 minutes.
3. When ready to serve, stir in the bacon and lime juice. Then serve the beans topped with fresh cilantro.
