2. Add the onion, garlic, lentils, cumin, paprika, oregano, and salt and pepper to taste. Add 6 cups of water or enough water to cover the ingredients. Cover and cook on Low for 7 hours or until the beans are tender.
3. Stir in the tomatoes. If the water has been absorbed and the beans are still too firm, add a little more water, put the lid back on, and continue to cook for 1 more hour, or until the beans are soft.
4. Stir in the lemon juice and serve hot topped with chopped cucumber, tomato, and parsley.
