1. Line four baking sheets with parchment paper.
2. Stir milk, sugar and 1/2 cup (1 stick) of butter together in a heavy bottom pan over medium high heat. Add dates. Stir constantly while cooking until the temperature reaches 235º F on a candy thermometer or when drops of the mixture into a bowl of cold water reach a soft ball stage.
3. Remove from heat and add 1/2 cup (1 stick) of butter and vanilla. Beat until starts to thicken and add chopped pecans.
4. Divide onto four baking sheets lined with parchment paper. Carefully spread across parchment paper to form a roll. Roll smoothly and cool completely before slicing.

1. Take all the chopped nut in a pan and dry roast for 30 second on medium heat until lightly toasted. Add sesame seeds and roast for another few seconds. Remove nuts to a plate and set aside.
2. In same pan add butter and chopped dates. Cook on low heat for 2 minutes until soft keep mixing with spatula. Add raisin, roasted nuts and cardamom powder to dates and cook further for a minutes. Remove from heat.
3. Let the mixture cool enough to handle. Then mix further with hands (if needed).
4. Remove dates mixture on cling wrap and roll it into a log. Keep log in fridge and cut slices of date as required. Serve cold.
