1. Sprinkle the gelatin over the lemon juice to bloom.
2. In a small sauce pan over medium heat, combine the strawberries, sweetener and water. Stir to combine. Bring the strawberries up to a simmer then turn the heat to low and simmer for 20 minutes.
3. Tear the bloomed gelatin into small pieces and stir into the strawberries to melt. Turn off the heat and adjust sweetness. Let cool.
4. Spoon the strawberry jelly into a clean jar, cover and refrigerate. Use within 2-3 weeks. Can be frozen and thawed in the refrigerator before using.

1. Put the lemon juice in a small measuring cup or ramekin and sprinkle the gelatin over.
2. Add the raspberries, water, and Sukrin :1 to a small pot over medium heat. Bring to a low boil and turn heat down to medium low.
3. Simmer the raspberries for 20 minutes, stirring every few minutes. They will totally break apart.
4. Break up the gelatin and add to the raspberries, stirring to dissolve. Taste and adjust sweetness with the stevia glycerite. Cool.

5. Puree the strawberries in your food processor until they come out nice and smooth. Should be 1 1/4 cup after blended. (you can also leave them a little more chunky)

8. Reduce heat to medium and cook for 5 more minutes. Stirring frequently.
