1. Preheat your oven to 325. Prep your cookie sheets with Parchment Paper .
2. In a medium mixing bowl , whisk together the flour, cinnamon, and the baking powder.
3. Next, in a large mixing bowl , beat together the softened butter with the sugar alternative. You want this to become fluffy which can take 3-5 minuted to do. Keep in mind that it will not look 100% like it would if you were using real sugar.
4. When your sugar alternative and butter have been beaten until fluffy, add the dry ingredients from the first bowl to the mixing bowl. Do this by adding half of the dry ingredients at a time, stirring between additions. Then mix in the egg and vanilla

1. In a mixing bowl, blend together the butter with the sugar alternative until smooth. Then add the almond flour, eggs, and vanilla extract mixing until smoothly blended. Transfer the dough to plastic wrap, wrap it well, and refrigerate for at least an hour.
2. When you are ready to make the cookies, divide the dough in half. Line a rimmed cookie sheet with parchment paper. Lay out an additional sheet of parchment paper on your work space to work on. Preheat the oven to 350 f.
3. Roll out the first half of the dough to about ⅛" thickness on the parchment paper then use the larger cookie cutter to cut out the cookies and place them on to the baking sheet. Next, roll out the remaining cookie dough. Use the larger cookie cutter to cut the cookie and the smaller cutter to cut a hole in the center of the cookie. Transfer the cookies to the cookie sheet for baking. You should have equal amounts of cookies with holes in the center to cookies without holes in the center. Bake the cookies for 10-12 minutes or until they begin to turn golden.
4. To assemble the cookie sandwiches. Allow the cookies to fully cool on a rack. Place about a half of a tablespoon (or as needed) of the jam on the cookies without the hole in the center. Dust with sugar free powdered sugar and serve.
