1. Preheat oven to 350 degrees F. Coat a 9-inch cake pan with cooking spray.
2. In a large bowl, with an electric mixer, beat eggs and 1/3 cup brown sugar until creamy. Add flour, baking powder, salt, cinnamon, and milk; mix well. Gently stir in half the apples until evenly coated. Pour batter into cake pan. Arrange remaining apple slices over batter in a circle. Sprinkle with remaining brown sugar.
3. Bake 30 to 35 minutes, or until toothpick inserted in center comes out clean. Serve warm.
