3. Working with 3-4 at a time, roll the sticks in the egg. Allow excess to drip off for 3-4 seconds.
4. Place in the pan with the dehydrated potato and coat well, rolling each stick firmly in the potatoes and making sure each end is well coated. Set on rack to set up.
