Frequently Asked Questions

What are dauphinoise potatoes?

Dauphinoise potatoes is how the French say casserole of potatoes, heavy cream, and cheese. It’s delicious and also incredibly easy to make. Thin slices of Yukon Gold potatoes get cooked in heavy cream flavored with garlic, bay leaves, and nutmeg, then baked in a casserole dish layered with shredded Gruyère cheese until golden and bubbling.

Can you reheat potatoes dauphinoise?

One of the best things about Potatoes Dauphinoise is that if there's any left over it keeps well in the fridge for several days and it reheats beautifully in the microwave (unlike roast potatoes which can taste a bit floury when reheated). I've also frozen it, defrosted it in the fridge during the day, then reheated it in the oven for dinner.

How do you make dauphinoise sauce?

We also have another ‘slimmed down’ dauphinoise recipe for you to take a look at. Put the milk, whole garlic clove, bay leaves, thyme stalks and shallots in a heavy-based pan. Bring to boiling point, then remove from the heat and leave to infuse for 1 hour. Preheat the oven to 180°C/fan160°C/gas 4.

Is there a low carb substitute for cauliflower in potato gratin?

There is a better ingredient for making low-carb potato gratin - rutabaga, also known as swede. Although rutabaga contains more carbs than cauliflower, in my opinion it's worth using it in this recipe.
