How to Make Date Nut Log. Mix dates, marshmallows, nuts and cream. Add 2 cups graham cracker crumbs. Work well to solid form, (like meat loaf). Separate into to 2 portions shaped like liverworst (longish tube or log), place on waxed paper (or plastic wrap -- not aluminum foil) onto which more graham crackers have been sprinkled.
Thoroughly wet a piece of cheesecloth and lay out onto a flat work surface. Pour the candy mixture into the middle of the cloth and roll the cloth around it to shape into a log. Refrigerate until hard, 8 hours to overnight. Remove log from cloth and slice. You can use a heavy cotton cloth if you do not have cheesecloth, but do not use terrycloth.
These 5-minute low-carb candied nuts are definitely what I would call the occasional treat, rather than an everyday snack. They are quite sweet, but also so full of flavor thanks to the butter. They also have a very pleasant crunch, thanks to both the nuts and caramelization. A real winner, if you ask me!
Unlike the oven-roasted almonds I posted previously, these candied nuts come together in just a few minutes on the stove. You’ll want to start by turning the heat in a non-stick skillet to medium, and melting the butter.
