2. No-fry Method: Heat the Stuffed Pancake Pan on medium heat. Add few drops of oil to the cavities. Using a medium cookie spoon, add batter into the cavities. Cover the pan and cook for 3-4 minutes on the first side. Flip using a fork or chopsticks and cook another 3-4 mins, or until the exterior looks golden brown and a toothpick inserted in the middle comes out clean.
3. In a wide bowl add hot water. Add the cooked bhalle and let them soak for 15-20 minutes. Add a tiny plate on top to add weight. This process makes them softer. After that, gently squeeze them between your palms to get rid of the water and keep aside. If the water is still hot, add cold water to temper it.
4. Whisk yogurt (dahi) with water, salt, cugar, cumin and chaat masala. Adjust seasoning to taste.

3. Then transfer the batter to a stand mixer fitted with whisk attachment. You can also use a hand mixer here or use your hands and mix with a whisk/spoon.Beat at medium speed for 5 minutes (using the whisk attachment) until the batter doubles in size and becomes fluffy.It will also become lighter in color. If mixing by hands, whisk for around 10 minutes.
