1. Put the mushroom cubes or stock base into a glass measuring cup with 1/2 cup of water and microwave until the mushroom base has dissolved into the water, about a minute. Stir to combine.
2. Trim the roast, removing most of the fat even if you have to cut the roast into sections to get the fat off. (If you like the flavor of beef fat you can trim less vigorously; I prefer it to be well trimmed.)
3. Mix the steak rub, onion powder, salt, and black pepper. Rub all sides of the meat generously with the spice mixture.
4. Heat the oil in a non-stick or cast-iron frying pan and brown the meat well on all sides. This will take about 5-7 minutes; don’t rush the browning step. When the meat is nicely browned, put it into the slow cooker.

1. Season chuck roast generously on all sides with salt and pepper.
2. Place roast in slow cooker and cover with sliced onions. Cook on high for 4 hours.
3. After 4 hours (and once the roast has released its juices), slide the onions into the juices. Then add two cans of cream of mushroom soup and mix with the juices. Do your best not to disturb the roast. Cook for another two hours on high.
4. Check for fall-apart fork tenderness. If necessary, cook for another hour or so. Then switch to warm setting. It's pretty difficult (within reason) to overcook it.
