1. To get a crispy baked hash brown you need to grate the potatoes, either by hand with a box grater, or in a food processor. Place the grated potato into a fine-mesh sieve and rinse thoroughly under cold running water. As you rinse, continually move the potato round in the sieve to expose as much surface area as possible and rinse until the water runs clear.
2. Using your hands, squeeze as much of the water as possible out of the potatoes before tipping them into the centre of a clean tea towel. Gather up the edges of the towel to secure the potato in the centre then tightly twist the ends of the towel together to squeeze out any remaining water. You’ll be surprised by how much water comes out so it’s best to do this over the sink or a large bowl. You should be left with fairly dry potato shreds that separate easily as you run your fingers through them and don’t clump together.
3. Place the potato into a large mixing bowl and add the remaining ingredients. Mix and squeeze the seasonings thoroughly into the potato, I prefer to do this by hand.
4. Spoon 2-3 tablespoons of the mixture into each hole of the muffin tray and press down lightly. You should end up with 8 hash browns in total.

1. Heat 3 Tbsp of oil in a large frying pan on medium high heat.
2. While the pan is heating, squeeze out as much moisture as you can from the grated potatoes. It's easiest to do this with a potato ricer, using it much like you would a garlic press, except you don't force the potatoes through the ricer. You just press out the moisture. If you don't have a ricer, use paper towels to squeeze out as much moisture as you can from the grated potatoes.
3. When the oil in the pan heats up to the point of shimmering, but not smoking, add the grated potatoes, spreading them out along the bottom of the pan. The potatoes should not be too thick in any one place, no more than a half inch thick. Sprinkle some salt and pepper on the potatoes. After a few minutes, lift up one edge of the potatoes and see how done they are. If they have fried to a golden brown they are ready to flip. Use a large spatula to flip the potatoes over all at once, or divide the large potato cake into halves or quarters and flip. Continue to cook until they are golden brown on the bottom.

Option 1: Microwave the cauliflower rice for 2 minutes. Spread the crumbs out on a tea towel and to let it cool for a minute ( easier and quicker option). Option 2: Sprinkle the raw

1. Preheat the oven to 200 Celsius / 400 Fahrenheit.
2. If you have a food processor, break the cauliflower into florets and process until it resembles rice. You might need 2-3 rounds for this. Alternatively, use a box grater.
3. Microwave the cauliflower for 2 minutes. Spread onto a clean tea towel, let it cool down a bit. Then pull the tea towel together and form a cauliflower ball (see image in text). Squeeze as much moisture as possible out of the cauliflower. You should end up with AT LEAST 1/2 cup of liquid. I ended up with 200 ml - over 3/4 cup!
4. Place the riced cauliflower back into the bowl, add the rest of the ingredients and mix.

1. Mix together coconut flour, xanthan gum and salt.
2. Stir in hot water and mashed potato flavoring. Mix until combined.
3. Shred your dough into 'shredded potatoes' using a cheese grater.
4. Portion the shreds in to four portions. Gently mold each portion into a loose patty. Don't compact it too hard. You want the oil to reach the inside to yield a crispy hash brown patty.

1. Microwave the riced cauliflower for 2-3 minutes, until tender. (Alternatively, you can steam it.) Set aside to cool.
2. Meanwhile, whisk together the shredded onion, golden flaxseed meal, garlic salt, egg, and one egg white in a large bowl.
3. When the riced cauliflower is cool enough to handle, wrap it in a cheesecloth or towel. Squeeze tightly over the sink to drain as much moisture as possible. (I drained more than a cup of liquid.)
4. Stir the cauliflower into the bowl with the other ingredients. If it doesn't stick together well when trying to form a patty (i.e. if your head of cauliflower was very large), add another egg white.

1. Grate (see tips above) or process the cauliflower into small crumbs and place in a bowl lined with thin cloth or muslin cloth. Sprinkle the cauliflower crumbs with about a teaspoon of salt and mix through. Leave for at least 10-15 minutes. The salt will help to draw out the juice from the cauliflower.
2. After 15 minutes, pull the ends of the cloth together and shape the cauliflower mixture into a bowl. Twist and squeeze the ball with you hands really hard from different angles, to let out as much liquid cauliflower juice as possible. You should get about 1/2 cup of liquid. Discard the liquid from the bowl and return the juice-less cauliflower crumbs back in.
3. Add the chives, garlic powder, onion powder, turmeric, salt, pepper, nutritional yeast and eggs to the cauliflower and mash together using a fork. Once mixed through, sprinkle evenly with baking powder and add the tapioca flour. Mix well to incorporate.
4. Preheat the oven to 200 C / 400 F. Line a flat try, turned upside down, with non-stick baking paper. The reason I turn the tray upside down is because I didn’t want to have any edges of tray trapping the moisture around the patties. Having a completely flat try helps to make them a little crispier.
