1. If making this sauce with steak, cook steak to your liking first, then proceed with the rest of the recipe, adding to the pan juices.
2. Heat butter over high heat in a frying pan until foaming. Add and sauté garlic until just starting to brown and quickly add your peppercorns and stir through.
3. Immediately add beef bone broth, have it ready to go. If you leave the peppercorns in too long the heat will start popping them out of the pan. Stir to combine and bring to the boil.
4. Add cream and stir to combine. Simmer and reduce until coloured and thickened, stirring occasionally. Season to taste with salt.

1. If you're frying steak, chicken, mushroom etc leave the juices in the pan. This will add a huge amount of flavour to the peppercorn sauce. Melt butter over medium heat and deglaze the pan if necessary. Fry shallots until fragrant and translucent (2-3mins).

3. Reduce to a simmer until the sauce thickens enough to coat the back of a spoon. (8-12mins). It will thicken, just keep simmering and gently stirring.
4. Remove from heat and pour into jug. Just be aware it'll thicken the longer you leave it. Enjoy!
