Try this creamy parmesan risotto recipe made with rice, onion, garlic, white wine, cheese. Melt 2 tablespoons of the butter in a large saucepan over medium heat. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes. Add the rice and cook, stirring constantly, for 2 minutes.
Begin by heating your stock and keeping it warm. Add butter and oil to a large skillet over medium heat (I actually use a wok for risotto!). Add the onions and cook until just tender, then add the garlic. Cook 1 minute longer. Add the rice and toss to coat, (making sure oil gets onto every grain of rice if you can).
Arborio rice. This is important, arborio rice has a high starch content, making it perfect for risotto as it helps blend the flavors and get that creamy consistency. Other long grain white rice will work, but won’t be as creamy. Definitely worth seeking out!
CAULIFLOWER RISOTTO comes out perfectly cream like a traditional risotto without all of the carbs. This makes a great side dish for just about any protein and it’s ready in about 20 minutes. One of the things I love about living a low carb life is the challenge of recreating old favorites into healthy dishes. Traditional risotto is tasty, for sure.
