1. Line a 20cm square cake tin with baking paper, leaving plenty of paper hanging over the sides to help you remove the lattice slice once it has set.
2. Combine the gelatine and boiling water in a small bowl and mix well. Set aside to let the water cool slightly.
3. Place the softened cream cheese, softened butter and caster sugar into the bowl of an electric mixer and mix for 5 -6 minutes or until smooth and creamy. Please note the mixing time may vary depending on the temperature of your ingredients.
4. Add the vanilla essence, lemon juice and cooled water/gelatine mixture and mix for a further 2 - 3 minutes until combined.

1. Line a 28x18cm slice tin with baking paper, making sure you leave paper hanging over the sides to help you remove the Lemon Cheesecake Slice once it has set.
2. Crush the plain biscuits until they resemble fine crumbs either using a food processor or placing them into a zip lock bag and crushing with a rolling pin.
3. Place the crushed biscuits and the melted butter into a large bowl and stir until they are well combined. Transfer the mixture to your prepared tin and press down with the back of a spoon to flatten. Place the slice tray into the fridge until required.
4. Place the softened cream cheese into the bowl of an electric mixer and beat on a medium speed for approximately 4 minutes, or until smooth. The time it takes to beat the cream cheese will depend on it’s temperature.
