Copycat Swig Sugar Cookies are buttery, soft and somewhere in between a sugar cookie and shortbread, with a little bit of delicious frosting on top! This sugar cookie recipe doesn’t require any chilling and you don’t have to roll them out either! The best copycat Swig cookie recipe that I’ve ever tried! What are Swig Sugar Cookies?
I use a large 3 tablespoon cookie scoop and then a heavy-bottomed glass to get that pressed sugar cookie look and bake them at 325 degrees F to keep them soft. Add a light pink buttercream and you’ve got a Swig Copycat! In the bowl of a stand mixer, add your butter, granulated sugar, powdered sugar, canola oil, water and egg.
In addition to Swig’s sugar cookies, you can also find Crumbl sugar cookies which are much thicker and bigger cookies, and their frosting has almond extract in it, which I personally love. So there is an option to add almond extract to your frosting, if you like that too.
I've eaten more cookies than I care to admit at Swig and Sodalicious, and neither one of them sold these pressed sugar cookies I've seen all over the internet claiming to be “swig” cookies. Instead, their sugar cookies are thick cut-outs with a thick layer of buttercream on top.
