1. Preheat oven to 350°F, line 8 cups of a muffin pan with cupcake liners, and lightly spray insides with cooking spray (or use non-stick pan).
2. In a large bowl, whisk together milk, eggs and peanut butter.
3. Add in coconut flour, vanilla protein powder and baking powder, and whisk to combine. Batter should be fairly thick; Add 1-2 Tbsp water if it’s too thick, or 1 Tbsp more coconut flour if it’s too runny.
4. Divide the batter among muffin cups, about ¾ way to the top. Sprinkle optional toppings.

2. Mix the eggs, protein powder, and baking powder in a large bowl. Add the water or almond milk a little at a time until the batter is pancake batter consistency. You may not need all of the water.
3. Using a 1/3 cup measure, pour out the batter into the skillet. I was able to make 3 at a time. They are ready to flip when bubble start to form on the top.
4. Serve with butter, sugar free syrup, and chocolate chips.
