Cookies with apricot jam. Stuffed cookies are a shortbread dessert perfect for breakfast. I had great success making these simple cookies. So today I’m sharing with you another classic favorite: these simple jam filled cookies. The cookie dough for this recipe is made with just a few ingredients and they are ready in minutes.
It’s perfect on a slice of keto bread or in a cake. Cook apricots on a high heat and stir for 10 – 20 minutes or until all the water disappears. After that reduce heat and cook it and stir until your jam is thick enough. Optional addition is to add low carb sweetener of your choice, lemon juice and some grass beef gelatin to make it thicker.
This easy and delicious keto and low-carb jam really hits the sweet spot! 1 cup fresh berries of your choice (I used 1/4 cup each, strawberries, blackberries, raspberries, & blueberries) preferred sweetener, optional (equivalent to 1-2 tablespoons sugar or to taste) Place berries and sweetener in a small pot over medium-high heat.
To make basic low carb cookies, you need nut flour, butter, egg and a natural sweetener such as stevia or erythritol. This time, I decided to add cream cheese for a "fresher" taste. I made these thumbprint cookies in 3 different ways before I arrived at the PERFECT recipe. I baked one batch with no filling at all.
