If you want a low-carb gazpacho soup, you can omit the bread. Sherry vinegar. vinagre de Jerez is what is typically used to make gazpacho in Spain, but if you can't find it, you can use a red wine vinegar to your taste.
But, most will have these essential ingredients: tomatoes, onion, green pepper, cucumber, olive oil, vinegar (sherry vinegar is more authentic to Andalusia, where gazpacho originated), bread (soaked in water), and garlic.
Gazpacho is traditionally served cold as a refreshing summer soup (think Spain on a hot summer day), but it is also delicious if heated and served warm. If served warm I like to dip a good crusty french bread into it and enjoy with a glass of red wine.
Spanish gazpacho is more frequently made with green rather than red capsicum / bell pepper. I like to use red for colour consistency and also because red capsicum is slightly sweeter than green (which is actually just un-ripened red capsicum!). Red onion – You’ll only need about 1/4 of a red onion as we need 1/4 cup of chopped red onion.
