1. Add to your food processor (or high speed blender) the shredded coconut, macadamia nuts, cacao butter, honey, vanilla and salt. Turn on your machine and let it process until the mixture turns to liquid, scraping the sides of your processor bowl as needed. This may take about 20 minutes depending on your machine.
2. Fill mini silicone (or paper) baking cups with the mixture a 1/4 of the way full, then top each one with chopped pecans.
3. Freeze for 20 to 30 minutes or until set. Store chips in an airtight container in the freezer or fridge as they melt at room temperature.
