1. Preheat the oven to 375 F/ 190 C/ gas mark 5. You will need a medium casserole dish (approx. 6 cm deep).
2. Place the bread chunks in your oven dish. Whisk together the eggs and milk and pour over the bread. Stir thoroughly without pressing down and set aside for 5 minutes, then stir again.
3. Pour in the frozen blueberries, tuck them in between the bread pieces without pressing down, leaving some on the top. Sprinkle the wheatgerm (if using) and sugar over the whole thing, drizzle with the melted butter and bake for 30-40 minutes.
4. Remove from the oven and serve immediately.

1. I like to either use day old bread or toast the bread cubes before using them in the casserole. To toast the bread cubes, preheat oven to 350 degrees F and place bread on prepared baking sheet. Bake in the oven for about 10 minutes then evenly spread bread in a 9×13 inch baking dish coated in nonstick spray.
2. Sprinkle blueberries evenly over bread and set aside.
3. In a large bowl, whisk together egg whites, almond milk, maple syrup, vanilla, cinnamon, nutmeg and salt. Pour mixture evenly over bread, cover and place in fridge for at least an hour, but best overnight.
4. Preheat oven to 350 degrees F, uncover casserole and bake in the oven for 45 to 50 minutes. Top with powdered sugar or maple syrup, serve and enjoy!

2. Spray a 3 quart casserole dish with cooking spray, add bread cubes, and pour egg/milk mixture evenly over bread cubes. Stir together until everything is coated. *For the best texture results cover casserole dish and let it sit overnight in the fridge. You can also let it sit for about 30 minutes before baking to let it soak up a bit and then bake the same day. We enjoy it either way!
3. Just before you're ready to bake add blueberries and stir into the bake.
4. Place Blueberry French Toast Casserole into a preheated 375 degree oven for 40 minutes.
