Preheat oven to 350 degrees. In a medium bowl, combine eggs, milk and crackers then mix. Add in onion, cheese, ground beef and mix well. Shape the meat mixture in to a loaf.
Preheat oven to 350 degrees and prepare loaf pan or baking dish with cooking spray. Mix ¾ cup salsa, egg, almond flour, baking soda, and spices in a large bowl. Mix in ground beef or ground turkey. Spread meat mixture in loaf pan and bake for 30 minutes. Remove from oven and spread remaining ¼ of salsa on top of the meatloaf.
For the best keto-style meatloaf glaze, heat 1 cup of sugar-free balsamic vinegar, 1 Tablespoon of low or no sugar tomato paste, and 2 Tablespoons of sugar-free maple syrup. Simmer until the glaze is thickened and brush over the meatloaf before the second bake. Cool meatloaf up to 10 minutes before removing and slicing.
