These dulce de leche sandwich cookies AKA alfajores are the perfect bite sized cookie for all your holiday cookie boxes. People love the dulce de leche. In a large mixing bowl, cream butter and 1 cup of sugar for 4 minutes, until light and fluffy. Add egg and vanilla and mix for 1 minute. Stir in flour, baking soda, and salt. Let mixture chill in the refrigerator for 10-15 minutes. Combine 1/2 cup of sugar and 2 teaspoons of cinnamon in a shallow bowl.
