1. Line a 9x12 pan with aluminum foil or parchment paper. Smooth out any wrinkles and set aside. Crush candy canes.
2. Melt the dark chocolate (use the method you prefer, either a double boiler or microwave.) In the microwave, cook 30 seconds in a heat-proof bowl, stir and repeat until you have a smooth consistency. Stirring occasionally until completely smooth.
3. Mix in ¼ teaspoon peppermint extract, then spread the melted chocolate in an even layer in the prepared pan. Place the pan in the refrigerator while you prepare the white chocolate.
4. Place the white chocolate in a medium heatproof bowl and follow instructions for melting as above. Once melted, add ¼ teaspoon peppermint extract.

Add crushed candy canes and peppermint oil, if using, then stir to incorporate. Pour mixture onto prepared sheet pan then spread into an even layer. It helps to pick the pan up and gently shake it back and forth until the candy has formed an even layer. Sprinkle with reserved crushed candy canes then refrigerate until the chocolate has set, 20 minutes.
4. Break bark into pieces then serve or package into gift bags and tie with a ribbon - keep chocolates refrigerated until eating or gifting.
