1. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper.
2. Add drained chickpeas and honey or maple syrup to a food processor or high-powered blender (don’t use a regular blender) and blend until smooth. Transfer to a medium-sized bowl.
3. Add all remaining ingredients and mix until thoroughly blended. The batter will be sticky, don’t worry.
4. Drop batter by tablespoonfuls onto prepared baking sheets. Bake for 12-14 minutes. Remove from the oven and set aside to cool for 10 minutes.

1. Preheat oven to 350 degrees F and spray 8x8 inch pan with nonstick cooking spray.
2. In a food processor, add all ingredients except chocolate chips and process until batter is smooth.
3. Fold in 1/3 cup of chocolate chips, I like to use dark chocolate because it has less sugar but it's up to you. Note: Batter will be thick and super delicious, so you could actually just eat it on it's own!
4. Spread batter evenly in prepared pan then sprinkle 2 tablespoons of chocolate chips on top. (The batter may stick to your spatula, so I like to spray my spatula with nonstick cooking spray first.)

3. Roll the dough into 1 1/2 inch balls and flatten slightly with the bottom of a glass or measuring cup. The cookies won’t change shape much when baking. Place the balls on a baking mat or parchment lined baking sheet.
4. Bake for 10 minutes. Allow the cookies to cool a few minutes on the baking sheet and then remove them and let them cool on a wire rack.
