3. Pit all of the cherries using a cherry pitter. You should have ~4-5 cups of pitted cherries.
4. Process the cherries, ½ cup simple syrup, lime juice and salt in a high powered blender until smooth.

3. Pour chilled puree into the ice cream machine and follow the manufacture's instructions. Pour the black cherry soda while churning the sorbet.
4. Transfer to an ice cream container or freeze safe container, covered in plastic wrap. Freeze for a couple of hours or overnight.
