A delicious low carb sugar-free raspberry jelly and the perfect low-sugar spread for low carb breads, low carb muffins and more! Put the lemon juice in a small measuring cup or ramekin and sprinkle the gelatin over. Add the raspberries, water, and Sukrin :1 to a small pot over medium heat.
Add 1 cup water to crushed cherries. Bring to a boil over high heat. Reduce heat and simmer for 10 minutes. Strain juice through a jelly bag or cheesecloth. (I use a fine mesh "sifter" lined with a coffee filter.). Toss pits, pulp, and peels. Measure 3 1/2 cups juice into large pot. Add pectin and stir. Place on high heat and stir constantly.
Although cherries are a bit higher in carbs, a little spoonful will do on top of low carb pancakes (or anything really). If you like cherries, this is a definite pantry staple. There is no added sugar in this recipe, only the natural sugar from the fruit. Why I think a pantry of sugar-free cherry jam is a good idea.
