DirectionsStep1Place a large, heavy bottom pot on the stove, heat over medium heat.Step2Chop the bacon, or use kitchen shears to make small pieces and brown in the heated pot for about 3 minutes, just until it begins to render fat and start to cook.Step3Add the chopped onion, stir well and often with the bacon until the onions begin to cook and deepen in color, about 6 minutes.Step4Add the garlic and jalapeño, stir constantly so the garlic doesn't burn, but does brown and everything becomes aromatic, 1-2 minutes.Step5Add the canned tomatoes with juices and half of the chopped cilantro, scraping the bottom of the pan to get all the stuck on bits up.Step6Add the UNDRAINED beans, black pepper, and bay leaves.Step7Bring to a high simmer over medium heat, stirring occasionally.Step8Once bubbling nicely, reduce the heat to low, taste for seasoning, if needed, add salt to taste, a bit at time.Step9Cover, and keep on warm for 20 minutes, giving all the flavors time to come together.Step10When ready to serve, garnish with the remaining chopped cilantroIngredientsIngredients4 ouncesThick Cut Bacon (chopped)1 cupWhite Onion (finely chopped)1 tablespoonGarlic Cloves (minced/grated; 4-8 cloves depending on plumpness)1 Jalapenos (seeds and veins removed; minced. 1. Cook bacon: Heat a large pot or Dutch oven over medium heat. Add the bacon (add a splash of neutral oil if you are using lean bacon) and cook, stirring occasionally, until the bacon is cooked and crispy, about 6-8 minutes. Use a slotted spoon and remove the bacon to a paper towel-lined plate. Turn off heat and drain or blot all but 2 TBS fat from the pot.
    2. Cook the chorizo: Increase heat to medium-high and add the chorizo to the pot. Cook undisturbed for 1 ½ minutes. Flip and cook another 1 minute undisturbed. Stir and continue to cook, using the back of a wooden spoon to break the chorizo up into small pieces, until browned, about 1 more minute. Use a slotted spoon and remove the chorizo to a SEPARATE paper towel-lined plate. Turn off heat and drain or blot all but 1 tablespoon of grease from the pot.
    3. Sauté vegetables + seasonings: Decrease heat to medium and add the onions and jalapenos. Cook, stirring occasionally, until softened, about 5 minutes. Add the garlic, cumin, sugar, chili powder, oregano and paprika. Season with ½ teaspoon salt. Cook, stirring, until fragrant, about 1 minute.
    4. Add remaining ingredients: Add in the beans, tomatoes, broth (or beef if using) and the reserved chorizo to the pot. Stir well to combine. Increase heat to medium-high and bring to a rapid simmer. Immediately reduce the heat to maintain a gentle simmer.
