1. Preheat oven to 425F.
2. Add the cauliflower to a microwave safe bowl, place a plate over the top and cook in the microwave for 7 minutes.
3. Add 1 tablespoon of olive oil over the top. Sprinkle with smoked paprika, cumin, salt and pepper, then toss to coat. Pour onto a baking sheet pan lined with parchment paper or a Silpat and bake for 10 minutes or until the cauliflower is tender and golden.
4. While the cauliflower is still warm, add to the bowl of a food processor along with the remaining ingredients. Pulse until everything is thoroughly combined and smooth. Add a little more olive oil if the mixture is too thick.

4. Add the remaining ingredients to the processor/blender. Blend on high until smooth and creamy. If the consistency is too thick, add more oil to thin it out, if desired. Taste and season with salt and pepper if needed.
