1. Grate the cassava, the coconut, the pumpkin, and spices, etc. Mix together the cassava, coconut, pumpkin, sugar, spice and nutmeg.
2. Cut in the butter until melted. Stir in the coconut milk. Add baking powder, vanilla essence, clove, and the raisins. Mix well.
3. Pour into a well greased 9” × 9” (23cm × 23cm) loaf pan. Bake for 1 hour in a moderate 350°F (180°C) oven or until crisp and brown. Cool and cut in into bars.

2. In a large bowl, combine all the ingredients: grated coconut, frozen defrost cassava, coconut milk, melted butter, sugar, nutmeg, cinnamon, minced ginger, salt and vanilla. Mix well until all the ingredients have been fully combined. If using raisins you may add at this point.
3. Pour the mixture in the prepared baking dish and bake for about 60 minutes or until the center is firm. If it is still wobbly add another 10 minutes.
4. Remove and let it cool for about 10 minutes, then cut in squares and serve.
