1. Wash, stem, seed and coarsely chop the peppers. Add to a large pot (about 6 litres / quarts in size or larger.)
2. Make a spice bag for the pickling spices and secure them in it. (Tied up in a cheesecloth or other cloth bundle is fine). Add to pot.
3. Add all the remaining ingredients to the pot.
4. Bring to a boil, uncovered.

1. In a small saucepan combine the vinegar and salt. Bring to a boil over medium high heat.
2. Divide your peppers between two wide mouth pint jars. Pack them in so the jar is filled (do not break apart the peppers). See note 1.
3. Pour the heated vinegar over the peppers filling the jars to the top.
4. Tightly fasten the lid in place and store jars in a cool, dark place for 2 months.
