1. Squeeze lemons until you get 1 cup of fresh juice.
2. Combine lemon juice and sugar and stir to dissolve.
3. Boil mixture until thick and syrupy—about 20-30 minutes, stirring regularly. Test the syrup by dropping a small bit into cold water—if it crystallizes and becomes brittle, it’s ready!
4. Spray down a mini muffin tin or silicone mold with cooking spray and add heated mixture to the tin/mold. Fill each mini muffin cup less than halfway full, or fill small silicone molds about ¾ full. (I used a cooking syringe to help transfer my syrup into the silicone molds.)

1. In the bowl of a food processor fitted with the blade (or a blender if you don't have one), combine powdered sugar, dry milk powder and salt. Pulse to combine and cut milk powder into finer pieces, about 30 seconds. Set aside.
2. In heavy bottomed saucepan, combine sugar, corn syrup, honey and water. Bring to a simmer and allow to cook for 4 minutes undisturbed.
3. Clip candy thermometer to side of saucepan, ensuring the bulb isn't touching the bottom of the pan. Add butter and stir to combine. Cook until at least 235F and no more than 240F, then remove from heat. (See notes)
4. Stir in vanilla and dry mixture with a silicone spatula until well combined. Pour out onto Silpat or parchment lined cookie sheet to cool. After about 15 minutes, the dough should be cool enough to handle.
