It turns out I needed several ingredients to make these low carb pecan sandies go from good to GREAT. Almond flour, oat fiber, low carb sugar, xanthan gum, gelatin (optional), salt, baking soda, pecans, butter, vanilla and one egg white.
Any good cookie recipe will use vanilla extract because it brings out lovely warming notes in a baked good, whether that be a low carb one or not. 1/2 tsp Baking powder – Baking powder helps cookies to properly rise and bake while still staying a bit fluffy inside.
